Bourbon Pecan Pie – Featuring Belfour Bourbon

Ingredients

  • CRUST

  • 1 2/3 cup Flour

  • 1 tablespoon powdered sugar

  • 3/4 teaspoon salt

  • 5 tablespoons shortening

  • 4 tablespoons butter

  • 1/4 cup ice cold water

  • 1 egg white, lightly beaten

  • FILLING

  • 6 tablespoons softened butter

  • 1 cup Dark Brown Sugar, packed

  • 3 eggs

  • 1 teaspoon vanilla

  • 1 teaspoon salt

  • 3/4 cup Dark Corn Syrup

  • 1 1/2 tablespoon Belfour Texas Pecan Bourbon

  • 2 cups Pecan Halves

Directions

  • CRUST

  • Preheat oven to 350F.

  • Combine flour, powdered sugar, and salt in a food processor. Pulse to combine. Add cut pieces of butter and pulse 5-6 times. Sprinkle with half of the ice cold water. Pulse 5-6 times. Add remaining ice water and pulse 5-6 more times.

  • Knead dough 2-3 times.

  • Wrap the dough in plastic and let rest in the fridge for 1 hour.

  • Roll dough in to 12 inch circle and place in pie pan. Refrigerate until ready to fill.

  • FILLING

  • Beat butter and brown sugar until creamy. Beat in eggs one at a time. Add vanilla, corn syrup, salt, and Belfour Texas Pecan Bourbon. 

  • Spread 1 cup of pecans in the bottom of the pie crust.

  • Pour filling into pie crust. Add remaining pecans.

  • Bake for 45 minutes to 1 hour on baking sheet.
